Sesame Peanut Soba Noodle Salad

A vibrant, satisfying bowl packed with crunchy vegetables and a creamy, zesty peanut dressing.

Ingredients

  • 270gsoba (buckwheat) noodles
  • 150gedamame beans, shelled and thawed
  • 2 cupspurple cabbage, finely shredded
  • 1 largecarrot, julienned
  • 3 tbspsmooth peanut butter
  • 2 tbspsoy sauce
  • 1 tbsprice wine vinegar
  • 1 tsphoney or maple syrup

Method

  1. 1Cook the soba noodles in boiling water for 4 minutes or until tender, then drain and rinse under cold water.
  2. 2In a small bowl, whisk together the peanut butter, soy sauce, vinegar, and honey until smooth, adding a splash of warm water if too thick.
  3. 3In a large mixing bowl, combine the cooled noodles, edamame, cabbage, and carrot.
  4. 4Pour the dressing over the salad and toss well to coat all ingredients evenly.
