Vegan dinners
One-Pot Red Lentil Dhal
A comforting, aromatic Indian staple that is both budget-friendly and incredibly simple to prepare in one pot.

Ingredients
- 250gdried red lentils, rinsed
- 1Lvegetable stock
- 1 mediumbrown onion, finely diced
- 1 tbspfresh ginger, grated
- 1 tspturmeric powder
- 1 tspground cumin
- 100gbaby spinach leaves
- 2 tbspcoconut oil or vegan butter
Method
- 1Heat the oil in a large pot over medium heat and sauté the onion and ginger until translucent.
- 2Stir in the turmeric and cumin, cooking for 1 minute until the spices smell toasted.
- 3Add the rinsed lentils and vegetable stock, then bring to a boil.
- 4Reduce heat to low, cover, and simmer for 20 minutes until the lentils have broken down and the dhal is thick.
- 5Stir through the baby spinach until just wilted and season generously with salt and pepper.
- 6Serve warm with vegan naan bread or basmati rice.
