Lemon and Rosemary Roasted Chicken Thighs

A rustic, citrus-infused chicken dish that fills the kitchen with the scent of fresh rosemary and caramelised lemon.

Ingredients

  • 8Chicken thighs, bone-in and skin-on
  • 1Lemon, sliced into rounds
  • 4Fresh rosemary sprigs
  • 6Garlic cloves, smashed but whole
  • 3 tbspExtra virgin olive oil
  • 500gSmall roasting potatoes, halved
  • 1 tspBlack pepper, cracked

Method

  1. 1Preheat oven to 200°C.
  2. 2In a large roasting tin, toss the potatoes with 1 tbsp oil and roast for 15 minutes.
  3. 3Pat chicken dry and place on top of the potatoes along with lemon slices, rosemary, and garlic.
  4. 4Drizzle everything with the remaining oil and season generously with black pepper.
  5. 5Roast for a further 30-35 minutes until the chicken skin is crispy and potatoes are golden.
